Caprese Salad Bites

60 red and/or yellow cherry tomatoes
1 lb. fresh mozzarella, cubed
¼ c. olive oil
3 Tbs. balsamic vinegar
fresh basil, chopped

Cut tops off tomatoes. Remove seeds with melon baller. Cut thin slice off bottoms of tomatoes.
Place tomatoes upside down on paper towel to drain. Stand tomatoes upright. Place one mozzarella cube in each tomato.
Drizzle with olive oil or vinegar or mixture of both. Garnish with basil.
